Dear Lab Guy, I got this Baume hydrometer (Thomas Scientific art. no 6025f91) and I am wondering if I can use it at high temp like 70®C, I would like to use it in my chocolate making but don't want to break it.

The Baume hydrometer you purchased from Thomas Scientific is SP Bel-Art's 1.000/2.000 Specific Gravity and 0/70 Degree Baume Dual Scale Hydrometer. This hydrometer is well suited for use at 70°C.
When using any hydrometer at higher temperatures, the glue holding the paper scale inside the hydrometer may soften and release the scale – rendering the unit un-usable.
As an extra precaution, don't allow the hydrometer to sit in these high temperatures for extended periods of time. Measure, remove, rinse, and repeat as needed but don't let it sit in the chocolate.
